Warm soba noodle with Shiitake Mushroom Dashi soup: 4 cups water 1 dried kombu 3 Tbsp soy sauce 2 Tbsp cooking sake 1 Tbsp sugar 1/2 cup sliced shiitake mushroom 2 Tbsp scallion, chopped 1/2 tsp grated fresh ginger 6 oz cooked soba noodle -

Instruction: 1. Gently wipe surface of Kombu with damp paper towel. Place kombu and sliced Shiitake mushroom in a medium pot with 4 cups water. Simmer for 10 min, be careful not to let it boil. Set it aside. 2. In the same pot, put cooking sake and sugar over medium heat. When it start to boil, put soy sauce. Turn the heat off immediately after they start to boil again. 3. Put the Kombu and shiitake mushroom stock in the pot. Let it simmer for 2 min. 4. Add the cooked soba noodle, serve in a bowl. Garnish with chopped scallion and ginger.
